Actually it was yesterday... but there's still time to participate. Blogger and RD Nutrition By Eve issued a challenge for Nutrition Day: add a fruit or vegetable to every meal and snack you eat today. Try to add a lot of variety in those choices.
Here's a peek at my day...
Breakfast - banana with my oatmeal
Snack - apple with some walnuts
Lunch - sandwich with lettuce and tomato
Snack - dried plum with almonds
Dinner - Rice and beans with guac and salsa (kind of stretch, I know - should have added a veggie on the side)
